FIELD: flour-milling industry. SUBSTANCE: method involves preparing rye and wheat grain mixture with rye and wheat grain weight ratio of (15:85)-(85: 15), with wheat grain having gluten content below 20%; separating grain mixture and treating it in concentrator; providing slight shelling for reducing grain ash content by 0.02% as compared to initial ash content; aspirating grain mixture and subjecting to hydrothermal treatment for 6-12 h to provide grain moisture content of 14-16%; grinding in five break roll systems to obtain ground product with the yield of at least 97%, ash content below initial value by at least 0.08%. Grinding size is characterized by residue of below 1% on wire cloth woven sieve No.067 with mesh size of 670 mc and passage of at least 45% of product through silk sieve No.38 or polyamide cloth sieve with mesh size of 160 mc.
