FIELD: food industry.
SUBSTANCE: invention is related to production of triticale-rye-flax food flour. A grinding mixture is prepared in advance from prepared triticale and rye grains, as well as flax seeds in a ratio of 4.6:4.6:0.8. Before grinding the finished triticale-rye-linen grinding mixture, the triticale and rye grains are subjected in advance to hydrothermal treatment by cold conditioning, moistening to a moisture content of 14-15% and softening for 7-9 hours. The grinding mixture is made up of hydrothermally processed triticale and rye grains in the amount of 92% and flax seeds in the amount of 8%. The finished mixture is crushed on roller machines with placement of corrugations tip-to-tip with a fast roller rotation speed of 6.0 m/s, with a ratio of circular speeds of fast and slow rotating rollers of 2.5, with a density of cutting rollers of 8 pieces per 1 cm, with an angle of corrugation tips of 9%. Next, the grinding product is sorted on sieves of various sizes.
EFFECT: invention makes it possible to obtain triticale-rye-flax flour with a high content of fat and protein.
