SUBSTANCE: method for producing wheat-triticale-rye flour from a grinding mixture of wheat, triticale and rye grains involves preliminary cleaning of the feedstock and compiling a grinding mixture from prepared grains of wheat, triticale and rye in a ratio of 5:4:1, or 5:3.5 :1.5, or 5:3:2 respectively. Moreover, the pre-grinding mixture of grains of wheat, triticale and rye is subjected to hydrothermal treatment by cold conditioning, moistening to a moisture content of 16.5% and softening for 12 hours, after which the prepared wheat-triticale-rye grinding mixture is ground in 5 break systems in roller machines with back-to-back grooves with a ratio of circular speeds of fast and slow rotating rollers of 2.5 and 6 grinding systems speeds in fast- and slow-rotating rollers with smooth, micro-rough rollers with the fast roller rotation speed from 6.0 m/s, with the ratio of fast- and slow-rotating rollers speeds of 1.5, with a density of cutting rollers from 9 pieces per 1 cm, with a groove slope of up to 10%, followed by sorting the grinding product on sieves of various sizes.

EFFECT: invention allows to expand the range of flour-based food products by using processed grain wheat-triticale-rye grinding mixture in the baking and confectionery industries.
