FIELD: flour-milling industry. SUBSTANCE: method involves separating rye grain and treating it in concentrator; providing light shelling for reducing ash content by at least 0.02% as compared to initial value; directing grain for aspiration and hydrothermal treatment for 5-7 h to provide grain moisture content of 13.5-15%. Grain is ground in three break roll systems to obtain ground product with 97% yield, and ash content less than that of initial grain by 0.06%. Grinding size is characterized by sieve residue on wire cloth woven sieve No 067 with mesh size of 670 mc not exceeding 1% and passage of at least 45% of ground product through silk sieve No.38 or polyamide cloth sieve No.41/43 with mesh size of 160 mc.
