FIELD: baking industry, particularly, production of original smalls with treatment- and-prophylactic properties based on local raw material. SUBSTANCE: method involves preparation of dough and at the last stage of preparation, finely-divided mixture is introduced in dough. Mixture contains preparation of sea kale "Sevva" and leaves of thistle in preset quantities. Said additives are introduced together with candied peels prepared from beet boiled in presence of acid. Then prepared dough is treated according to traditional technology. Proposed method is directed to production of enriched smalls possessing original appearance, high degree of porosity and increased content of iodine and valuable biological substances. EFFECT: broadened assortment of inexpensive smalls of increased biological value and possessing tonic, treatment and prophylactic properties. 1 tbl, 4 ex
