FIELD: poultry-processing industry or meat industry. SUBSTANCE: protective composition contains aqueous solution of collagen-containing extract, glycerin, and acetic acid. All components mentioned are used in predetermined amounts. Protective composition is applied to bird's carcass or meat product by spraying or dipping it into composition. Usage of protective composition allows power consumption to be reduced by 50% as compared to conventional methods of storage of meat and poultry product. Composition is easily prepared, is non-toxic and may be readily washed away from meat product with room temperature water.
