SUBSTANCE: invention relates to food protection products. The composition for a film-forming biodegradable cured food coating includes sodium alginate, ascorbic acid, lecithin, ginger essential oil, rosemary essential oil and water, with the following ratio of initial components, wt.%: 1.8–2.5 of sodium alginate, 0.3–0.5 of ascorbic acid, 0.01–0.05 of lecithin, 0.1–0.25 of ginger essential oil, 0.1–0.25 of rosemary essential oil, the rest is water.
EFFECT: proposed composition for film-forming biodegradable curable food coating provides effective protection against microbial spoilage of fresh meat, semi-finished meat products and meat products and increases their shelf life.
