FIELD: food industry. SUBSTANCE: invention relates to hard candy caramel prepared of the composition that has the granulated sugar, syrup, citric acid and essence. It has also iodine chelate compound with nonsized starch with humidity 8.5% in the range of ratio iodine : : starch from 1:30 to 1:60 or sized starch with humidity 90% in the range of ratio iodine : starch from 1: 20 to 1:40 in the following ratio of components, kg/1 ton of ready production: granulated sugar, 751.22; syrup, 311.46; citric acid, 5.24; essence, 3.51; iodine chelate compound with nonsized starch in the range of ratio iodine : starch from 1:30 to 1:60, from 1.32 to 2.56 or with sized starch in the range of ratio iodine : starch from 1:20 to 1:40, from 8.51 to 17.15, respectively.
