FIELD: food-processing industry. SUBSTANCE: pastry composition contains flour, sand sugar, salt, water, fatty product, chemical looseners and emulsifier. Soya enricher-okara (rich in irreplaceable food components: proteins, cellulose, vitamins, minerals, natural α- and β- tocopherol antioxidants increasing product storage life) is used as emulsifier and margarine is used as fatty product. Pastry composition further contains condensed milk, invert syrup, sterncetine and essence used in the following amounts, wt. %: 1st grade wheat flour 52.45-62.63; sand sugar 11.78-18.92; invert syrup 1.62-2.51; margarine 8.59-19.79; condensed milk 1.22-1.45; okara 2.31-6.49; salt 0.36-0.43; soda 0.36-0.49; ammonium carbonate 0.06-0.09; sterncetine 0.79-0.94; essence 0.05-0.06; water the balance. Pastry of such composition may be used as curative and dietary product.
