FIELD: food-processing industry, in particular, production of glazed wafer cakes. SUBSTANCE: cake has combination of wafers and milk-and-protein interlayers with decreased content of dry substances. Wafer sheets are produced from components such as high-grade wheat flour, melange, salt and soda. Receipt of half-finished product-filler has components such as sand sugar, butter, vanillin, agar, starch syrup, egg albumen, condensed milk, and citric acid. Cake is covered with chocolate glaze. Components are used in respective amounts. EFFECT: improved gustatory quality, increased storage time and improved energy value.
