SUBSTANCE: method involves blowing bird and rabbit carcasses with cold air after slaughter; providing staged spraying with water by aerosol dispersion; cooling with air till complete evaporation of dispersed moisture, with time intervals between stages increasing in the process of cooling. Air flow rate is 2-3 m/s, air temperature at each stage, except for terminating stage, is 0 - +1 C. Temperature at terminating stage is from -5 C to -7 C.
