FIELD: food-processing industry, in particular, food-concentrates industry. SUBSTANCE: apparatus has housing, charging and discharge hoppers, air duct and drives. Discharge hoppers are arranged along sides of housing. Gas distributing grid located inside housing is made in the form of pivotally connected perforated plates and pivotally connected to discharge hopper carcass. Hollow cylinder with supporting shafts is arranged under gas distributing grid. Supporting shafts are connected through annular slots in housing end walls with crank mechanisms providing oscillating motion of housing with following circular movement to upper position. Deflecting nozzle with flexible hose is positioned above gas distributing grid for movement along cylinder axial line on guides. Hose is connected to water supply line. EFFECT: improved quality of ready product, increased efficiency by uniform food processing in mixed layer and improved moisture-and-heat processing mode. 5 dwg
