FIELD: food engineering, in particular, food concentrates industry. SUBSTANCE: apparatus has housing, charging and discharge hoppers, vapor pipeline and drive. Working chamber is arranged inside housing and has lower part formed as perforated semicylinder. Shell attached to outer side of semicylinder has internal vertical partition walls and end branch pipes connected to water supply flexible hoses. Pipeline extending along perimeter of working chamber upper part is equipped with nozzles and is connected to water supply flexible hose. Working chamber has two synchronous drives adapted for imparting vibration motions to working chamber with following circular movement to upper position. Apparatus may be used for cooking groats products with following obtaining of groats concentrates, as well as for blanching plant products such as carrot, beet, potato etc. EFFECT: improved quality of ready product, increased thermal effectiveness of process by uniform processing of product in mixed layer, improved regulation of liquid-thermal processing mode through employment of useful hydrodynamic mode of processing. 10 dwg
