FIELD: food industry, particularly, automation of processes of processing of food concentration. SUBSTANCE: method includes measurement of consumption of initial materials, flow rate of heating agent, product pressure and temperature in extruder prematrix zone, working member rotation speed with correction of product pressure in prematrix zone. Extruder has line for product recirculation from prematrix zone to zones of homogenization and compression. Subject to additional measurements are temperature of supplied product, pressure values in compression and homogenization zones, flow rate and temperature of product in recirculation lines ahead of compression and homogenization zones, pressure difference in compression and homogenization zones used for performance of action on product flow rate in line of recirculation to zones of compression and homogenization. Flow rate of initial materials is continuously corrected depending on product consumption in recirculation line. Flow rate of heat carrier to zones of compression and homogenization is corrected by current values of heat fluxes with initial product and product supplied through recirculation line to zone of compression and homogenization. Invention is used in devices for production of extruded products and also in other production processes with use of extrusion. EFFECT: stabilized pressure in extruder prematrix zone. 1 dwg
