SUBSTANCE: protein foodstuff, which can be used as therapeutic and prophylactic substance, represents collagen enzymatic hydrolysis product including complete amino acid assembly, polypeptides, water- and fat-soluble vitamins, trace minerals, and residual moisture. Enzymatic hydrolysis involves mammalian skin split at split-to-water weight ratio from 0.35: 1 to 0.6:1. Hydrolysis is carried out at 42-49 C and pH 7.8-8,0 for 7 to 10 h. Nonhydrolyzed mass is then precipitated at pH 7.4-7.5 and temperature 80-95 C.
