Method involves the use of foodstuff "Kollamin" as an enzymatic hydrolyzate of collagent-containing tissues containing amino acids, polypeptides, water-soluble and lipid-soluble vitamins, trace elements and residual moisture. Based on "Kollamine", nutrient medium is prepared. This medium has sodium chloride, lactose, agar-agar and purified water that is used for culturing bifidobacteria or lactobacilli. Ready product has 1 x 108 - 1 x 109 cells of viable cultures. Product is enriched with biologically active polypeptides with molecular mass below and above 2 000 Da, trace elements, organic and unsaturated fatty acids.
