METHOD OF PRODUCTION OF SPECIAL VODKA Russian patent published in 2002 - IPC

FIELD: liqueur and vodka industry. SUBSTANCE: method involves preparing an aqueous-spirituous solution to obtain vodka with proof value 40%. The prepared aqueous- spirituous solution is stirred thoroughly, its proof value is corrected and repumped into supply tank followed by feeding on carbon refinery battery. The rate of filtration of an aqueous-spirituous solution is up to 40 dal/h for fresh carbon and up to 30 dal/h for regenerated carbon. After filtration vodka is fed into finishing tank. Fructose dissolved in softened water or in 40% vodka is added into finishing tank at stirring. Bee wax (pieces with size 1-1.5 cm) is poured with an aqueous-spirituous solution of proof 70% taken in the ratio 1:5. Infusion is continued for 5 days at periodic stirring for 20-30 min, 2 times per a labor shift. Ready infusion is poured off with care, filtered off thoroughly through fabric filter and added into finishing tank at stirring. Aromatic principle "Honey" ASG 906 and aromatic principle "Lipoviy tzvet: ASM 164 are dissolved separately in 40% vodka, solutions are mixed and added into finishing tank as a mixture. After addition of components into finishing tank vodka is stirred thoroughly, proof is corrected if necessary in the same tanks by addition of alcohol or water followed by stirring and control of the proof value and fed to bottling after control filtration. Special vodka has the following ratio of components per 1000 dal: fructose, 4.5-5.5 kg; aromatic principle "Honey" ASG 906 of firm "Reino and FiS" (France), 0.02-0.04 kg; aromatic principle "Lipoviy tzvet" ASM 164 of firm "Reino and FiS" (France), 0.01-0.03; an aqueous-spirituous solution, the balance. The proposed invention ensures to obtain special vodka with high organoleptic indices and high biological value, to retain saturation of taste and aroma at storage.
