FIELD: food-processing equipment. SUBSTANCE: apparatus has hermetically sealed chamber with safety valve and thermal regulator. Heating members with smoke generators thereon and heat-reflecting screens underneath are located on lower part of chamber cylindrical wall. Cassettes with food supporting grids above chutes defining smoke guides are equipped with drip-proof screens. Splash-proof screens with recessed windows are located along cylindrical wall. Height of recessed windows is 0.15-0.35 the distance between grids. Excessive pressure less than 0.1 MPa may be created in chamber for processing food products with partial air pressure not exceeding 0.7 of allowable excessive pressure value. Apparatus may be used for thermal treatment and hot smoking of meat products, poultry and fish. Such construction allows apparatus to be operated without supplying cooling water. Food product is prepared without relieving air-smoke-vapor medium into environment. EFFECT: simplified construction and increased efficiency. 1 dwg
