FIELD: poultry-processing industry. SUBSTANCE: apparatus has base, hollow axially aligned movable cylinders with conical bores on adjacent ends thereof for shearing muscle tissues to knee joint. Flesh stripping cutter is arranged concentrically with respect to one of cylinders. Cylinders are provided with single-sided radial through slot having length equal to cylinder working stroke. Ejectors are inserted into internal cavity of cylinders. Plated epiphysis cutting knife with continuous V-shaped cutting edge is fixed to first cylinder casing. Cylinder is equipped with shear member having rectilinear continuous cutting edge. EFFECT: simplified construction and improved sanitary treatment of apparatus. 3 cl, 7 dwg
