FIELD: bird-processing industry. SUBSTANCE: apparatus has drive and several pairs of hollow cylinders with conical grooves on their adjacent ends. Cylinders are located in guides on rotors in axially aligned relation for effecting reciprocating motions to shift muscle tissues to knee joint of poultry leg and to remove it from joint by means of feelers mounted on frame. Movable cylinders are equipped with single-sided through radial slot having length corresponding to length of cylinder stroke. Ejectors are inserted into cavity of cylinders. End surface of one of guides serves as cutting member. EFFECT: increased efficiency and enhanced reliability in operation. 3 dwg
