FIELD: mechanical engineering for poultry processing industry. SUBSTANCE: device has a pedestal and two hollow cylinders mounted co-axially for motion. The cylinders have cone-shaped recesses in their adjoining ends. They are designed to displace flesh toward the knee joint. A cutting member positioned concentric relative to one of the cylinders is intended for removal of flesh from the knee joint. The device is provided with a driving mechanism. One of the cylinders is mounted for movement toward the other, and the other cylinder can move in the same direction as all flesh is shifted toward the knee joint. The cutting member is secured on the second cylinder in a fixed position relative to the cylinder base. The second cylinder is spring-loaded, and it is provided with an arrester for its immobility at the moment of flesh shifting. The device allows flesh shifting and removal from the bone to be concurrent. EFFECT: simple design, higher reliability. 2 cl, 6 dwg
