FIELD: food industry.
SUBSTANCE: invention relates to poultry-processing industry, in particular, to devices for removal of meat from poultry leg bones. The device contains a base, two hollow movable cylinders (mounted coaxially so that to enable relocation and having radial through slots with a length corresponding to the operating stroke of the cylinders with conic grooves on adjacent ends for muscular tissue shear towards the knee-joint) and a cutting element for removal of meat during the cylinders relocation towards each other, the cutting element positioned concentrically relative to one of the hollow movable cylinders. The cutting element is attached to the second hollow movable cylinder rigidly relative to the base. The hollow movable cylinders are designed to be assembled; elastic elements are mounted in their inner cavities. The cutting element is represented by a hollow cylinder with two smooth U-shaped cutting edges for epiphyses cutting.
EFFECT: invention usage will allow to simplify the device structure.
