SUBSTANCE: invention is intended for usage in poultry processing shops as well as at farming enterprises and in individual households. The device contains a base, two hollow movable cylinders, mounted coaxially so that to enable relocation and having conic grooves on adjacent ends for muscular tissue shear towards the knee-joint, and a cutting element for removal of meat during one hollow cylinder relocation towards the other one, the cutting element positioned concentrically relative to one of the hollow movable cylinders. The cutting element is represented by a cylinder with one or multiple cutting edge(s). Each edge is formed by the cylinder intersection with a plane at an acute to the cylinder axial line. Apart from boning the invention enables epiphysis cutoff.
EFFECT: reliable and handy device with an extended interval of service life between the blade sharpening instances.
