FIELD: food-processing industry, in particular, confectionery industry. SUBSTANCE: pneumatic cell has casing with walls, which together with working surface define pneumatic chamber. Working surface of pneumatic chamber is composed of two perforated plates. Space between perforated plates is filled with spherical grains of plastic material. Lower plate is rigidly fixed in casing and upper plate is positioned for displacement in vertical plane. Pneumatic cell is characterized in that flow rate difference characteristics thereof may be regulated without taking into account inertial properties of pneumatic chamber. It allows temperature of milk candy mass to be changed during cooling, forming and holding procedures in accordance with characteristics of complex nature.
