FIELD: food-processing industry, in particular, confectionery industry.
SUBSTANCE: pneumatic cell has casing with pneumatic chamber and intermediate chamber defined by two plates, with spherical grains of resilient filler material being charged into space between two plates. Lower perforated plate is rigidly fixed in casing and upper plate is movable in vertical plane. Upper plate is manufactured from continuous material and is equipped with opening for attachment therein of replaceable porous cells shaped to conform with shape of cast creams. Lower and side walls of cell define working surface of pneumatic cell.
EFFECT: improved quality of ready product owing to eliminating contacting of fondant mass with cell side surfaces during charging thereof with said mass.
