FIELD: food industry. SUBSTANCE: gas layer is formed with uniform distribution of pressure in layer. Uniform distribution of pressure in layer provides noncontact holding of food mass owing to partially filling inner space of pneumatic chamber with grainy material which is in boiling state at steady-state delivery of gas. Averaged speed of grain movement exceeds averaged speed of gas delivery into layer. Proposed method reduces cost of production on pneumatic devices owing to employment of non-expensive materials for making their working surfaces and it does not require high accuracy of production and gas delivery modes.
