FIELD: food industry. SUBSTANCE: the innovation deals with drying the food composition. The latter and the oxygen-sensitive culture of probiotic lactic- fermentation bacteria are sprayed all together in the hot air flow. Dehydrated food composition is obtained which contains alive probiotic lactic-fermentation bacteria being the ones capable to adhere to human intestinal cells, withdraw considerably pathogenic bacteria on human intestinal cells and immunomodulate in a human body. The innovation enables to obtain an easily dispersed food powder producing, at least, 100% viability of probiotic lactic-fermentation bacteria.
