FIELD: starch-syrup industry. SUBSTANCE: method involves keeping maize grains in wetting solution. The latter has a multienzyme complex "viscozym-L" comprising carbohydrases and sulfurous acid in concentration 0.05-0.1%. The concentration of preparation in wetting solution is 0.05- 0.08%. Wetting process is carried out at pH 4.5-5.5, at temperature 40-45 C for 28-48 h. EFFECT: increased yield of starch, decreased consumption of sulfurous acid.
