FIELD: production of starch.

SUBSTANCE: invention relates to production of starch during processing of grain and leguminous crops. Method for production of starch and its modification during processing of grain and leguminous crops includes soaking grain, separating grains from mortar, crushing grain, milling into mush, introduction into pulp, separation of pulp from pulp and washing it from starch, separation of starch-protein suspension into starch and protein fraction and drying of obtained products, wherein grain is soaked in water for 5–20 hours with duty water curve 1.0:1.0–1.0:10.0 at temperature 10–30 °C, from the soaked grains are separated lock solution, after which grain is left in air at temperature 10–25 °C for 18–240 h, moistening the filtering cloths, on which grain is sprouted, every 4–5 hours and relative air humidity of 60–80 %, sprouted grains are crushed, the sprout is separated, the sprout is washed from starch and dried. Washed pulp is used as a component of fodder. Extract produced during grains soaking is condensed to 38–40 % of dry substances and dried together with pulp for production of fodder.

EFFECT: development of technology for production and modification of starch during processing of grain raw materials (excluding maize) with maximum use of all components of grain, having consumer value.
