FIELD: analytical chemistry, oil production factories. SUBSTANCE: invention is related to field of practical employment of radio spectroscopy of nuclear magnetic resonance ( NMR ) for proximity analysis of acid number of vegetable oils. Sample of vegetable oil of definite mass is added with aqueous solution of salt of alkali metal in proportion 5:1 by mass, mixture is mixed up to complete neutralization of free fatty acids, NMR- relaxation characteristics are measure at room temperature, value of acid number of oil is calculated by graduation equation of dependence of acid number of oil on difference of amplitudes of signals of free precession and spin echo which parameters are found in process of calibration of NMR analyzer by samples of oils with known values of acid numbers. EFFECT: determination of acid number of vegetable oils that does not depend on their physical and chemical characteristics and does not require use of toxic reagents. 6 cl, 2 dwg
