FIELD: analytical methods in food industry. SUBSTANCE: invention is intended for determining lactic acid in a variety of lactic fermentation processes. Method envisages chromatographic separation on sulfonate-type cation-exchanger based on supercrosslinked (degree of crosslinking >100%) polystyrene, followed by spectrophotometric detection. Eluent used is 5-20 mM sulfuric acid with 1-10 vol % acetonitrile and separation is effected at 50-70 C. EFFECT: enabled selective detection of lactic acid in presence of succinic acid, reduced determination time, decreased column volume, increased reproducibility of analyses, and reduced expenses. 1 dwg
