FIELD: food industry.

SUBSTANCE: invention relates to the food industry, namely alcohol production, and can be used for the quantitative determination of organic acids (acetic, malic, lactic) and carbohydrates (maltose, glucose, fructose) in alcohol products (wort, mash). Claimed method for the determination of acetic, malic, lactic, maltose, glucose, fructose in alcohol production intermediates provides for the chromatographic separation of detectable carbohydrates and organic acids using a liquid chromatograph with a refractometer on a chromatographic analytical column RHM Rezex ROA-Organic Acid H+, filled with a sorbent, a resin with 8 % degree of crosslinking, in a hydrogen ionic form (300×7.8 mm, particle size 8 mcm), flow rate of the mobile phase (0.005 N H2SO4) 0.45 cm3/min, the temperature of thermostating column 60 °C and qualitative and quantitative determination of acetic, malic, lactic acids, maltose, glucose, fructose according to the chromatogram obtained. Sample preparation is filtration and centrifugation for 7 minutes at 13,000 rpm.

EFFECT: ensuring the universality of the conditions for the simultaneous determination of organic acids (acetic, malic, and dairy) and carbohydrates (maltose, glucose, fructose) in the intermediate products of alcohol production, expansion of the range of determined mass concentrations.
