FIELD: milk industry. SUBSTANCE: method involves processing casein and alkali mixture; obtaining said mixture by spraying 15% sodium hydroxide solution onto dry ground casein; mixing components and maintaining dry substance content within the range of 78-80%, pH value within the range of 6.2-6.9 and temperature of mixture within the range of 60-70 C; drying produced mixture having predetermined consistency while maintaining temperature of mixture within the range of 60-75 C; interrupting drying process when obtained product has moisture content of less than 8%. Another version of method involves mixing dry ground casein with powdered sodium hydrocarbonate while wetting produced mixture by spraying water and further mixing.
