FIELD: technology for vegetable raw. SUBSTANCE: invention describes method of preparing pectin involving hydrolysis of vegetable raw with hydrochloric acid and extraction of pectin substances from vegetable raw. Processes of hydrolysis and extraction are carried out using polyharmonic vibration effect in the frequency range 15-50 Hz.
