FIELD: food industry.
SUBSTANCE: vegetal raw material pectin production method involves operations of hydrolysis with hydrochloric acid and pectin substances extraction from vegetal raw materials. The hydrolysis and extraction processes with usage of polyharmonic vibration impact within the frequency range of 15-50 Hz. Simultaneously, the solution is subjected to ultrasonic impact in a cavitation mode with a frequency equal to 22 kHz and ultrasonic radiation intensity within the range of 1-3 W/cm2.
EFFECT: invention allows to increase the target product yield, significantly accelerate the extraction process due to intensification of metabolic processes on the solid and the liquid phases separation interface.
