FIELD: chemistry.
SUBSTANCE: plant material hydrolysis in extractant is performed, pectin substances are extracted under impact of ultrasound waves of 30 kHz frequency and 23÷27 W/cm2 intensity, pectin extractant is extracted and dried to extract pectin. Water is used as extractant. Pectin is extracted from citrus fruit peel at 29÷33°C. Ultrasound processing is performed for 24÷26 minutes. Final pectin extraction is performed by the effect of 96% ethyl alcohol.
EFFECT: enhanced product output and quality, reduced process duration.
