FIELD: food industry. SUBSTANCE: method involves grinding and mixing of fat, protein and carbohydrate components. In the process of homogenization, mineral and enzyme additives, and a preparation are introduced. The latter is prepared by successive extraction of biomass of Mortierella exigua micromycete by nonpolar extracting agent under above-critical state by water, alkali, water, acid, water, alkali and water with the following combination of the first extract with solid residue. Before using, mixture is reduced by water. EFFECT: exclusion of syneresis of fats during process of storage life and stratification of mixture after reduction.
