FIELD: food industry. SUBSTANCE: method involves extraction of bitter substance from flavedo of citrus fruits. Then citrus fruits are treated with preparation prepared by successive extraction of biomass of micromycetes Mortierella beljakovae with acid, water, alkali and water followed by combination of the first extract with solid residue and keeping for 2-5 h followed by grinding to obtain juice with pulp and final concentrating. Proposed method allows excluding opalescence of the end product and to enhance output. Invention can be used in production of concentrated beverages. EFFECT: improved preparing method.
