SUBSTANCE: method involves extracting bitter substances from citrus fruits with the use of non-polar liquefied gas; treating with preparation produced from Mortierella lignicola micromycet biomass by predetermined process; holding resultant mass; impregnating said mass with liquefied ammonia at pressure above atmospheric pressure; releasing pressure to value equal to atmospheric pressure at rate providing freezing of fruits.
