SUBSTANCE: method involves treating prepared banana fruits with preparation produced from Mortierella indohii micromycet biomass by predetermined process; holding for 2-5 hours; shelling banana fruits; grinding flesh for obtaining of juice; subjecting shell to hydrolysis; separating hydrolysate and blending it with juice. EFFECT: elimination of base opalescence and increased efficiency.
