SUBSTANCE: method involves treating prepared banana fruits with preparation produced from Mortierella exigua micromycet biomass by predetermined process; holding for 2-5 hours; shelling fruits; crushing flesh for obtaining of juice; subjecting shell to hydrolysis; separating hydrolysate and blending with juice. EFFECT: elimination of juice opalescence of base and increased efficiency.
