SUBSTANCE: method involves treating prepared banana fruits with preparation produced from Mortierella zychae micromycet biomass by sequential extracting with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue and holding for 2-5 hours, said preparation being used in an amount of 0,5-1•104 mg/t; shelling and crushing flesh for obtaining of juice; subjecting shell to hydrolysis; separating hydrolysate and blending with juice.
