FIELD: food-processing and chemical industry. SUBSTANCE: crystal grower has crystal seeding and fixing sections equipped with heat-exchange surfaces. Crystal fixing section has heat-exchange surface made in the form of bottom and comprises heat-exchange tubes defining massecuite heating and cooling zones. Crystal seeding section is made in the form of thin-walled cylindrical metal chamber and provided with electrodynamic emitters coaxially fixed on its outer surface. Emitters are alternatively switched through commutator periodic pulse generator. Heat-exchange surface of this section is made in the form of heat-exchange tube arranged axially to cylindrical chamber. EFFECT: reduced polydispersion of new massecuite by regulated initiation of creating crystallizing nuclei. 3 dwg
