FIELD: food- processing industry. SUBSTANCE: calcium-enriched food product comprises milk protein and calcium complex used in an amount providing for enrichment of food product with calcium. Calcium complex is product of interaction between calcium source and negatively charged emulsifier in the presence or in the absence of organic or inorganic acid or salts thereof. Calcium hydroxide, calcium carbonate, calcium chloride, calcium phosphate etc may be used as calcium source. Negatively charged emulsifier is citric acid and monoglyceride ester, stearoil lactilate in the form of sodium, calcium or acid salt etc, and it may be hydrated. Calcium complex may be dried. Calcium-enriched food product may milk-based product, liquid food product, beverage, confectionery, milk beverage, juice or ice-cream. Method involves producing calcium complex and adding it to food product. Calcium complex may be added in an amount sufficient for providing food product with 5-200% amount of daily calcium norm.
