FIELD: food industry. SUBSTANCE: microbiologic synthesis of food biosorbent involves providing submerged culture of edible mushroom Pleurotus ostreatus. Culturing is carried out with use of strains F-697 and F-720 for 48 h under aeration conditions on liquid starch- containing nutrient medium in absence of additional nitrogen sources. Resulting chitin-containing high-sorption capacity biosorbent produces stimulating effect on brewer fermentation process thereby increasing yield of alcohol in main fermentation stage.
