FIELD: food industry. SUBSTANCE: the invention presents a method, that refers to the flour-milling production. The method provides for the grain cleansing out, its primary wetting and softening. Repeated wetting is conducted using an aqueous solution of acetic acid with concentration of 0.1-0.2 %, at that the temperature of water for primary and repeated wetting is within the range of 16-20oC.
