FIELD: agriculture.

SUBSTANCE: invention refers to flour-grinding industry, namely, to preparation of wheat grain for grinding. The method includes washing of grain, single or double-staged moistening and binning. Besides, when grain is moistened at the first and/or second stage, an aqueous solution of preservative is used at the temperature of 14-20°C and ratio of 0.01-2.9% of preservative to grain mass. The preservative may be citric, lactic, acetic, benzoic, propionic, sorbic, formic or malic acid or their acid salts, as well as a complex food additive "Denfai" developed by LLC Green lines and representing a combination of preservatives such as calcium propionate, sodium diacetate and potassium sorbate. The method according to invention is used for mills with accumulating tank for moistening and binning of grains, for mills with limited capacity and for mills without accumulating reservoir.

EFFECT: method provides production of flour with higher quality and whiteness and improved baking properties as a result of suppression of various agents of bread diseases and moulds.
