FIELD: food industry.

SUBSTANCE: invention relates to food industry and is intended for determination of grains contamination with bread "potato" disease causal agents. The method includes preparation of a water wash of bacteria from the grain sample, wash filtration and pasteurisation to eliminate vegetative bacteria forms, bread cuts inoculation with pasteurised grain wash and controlled bread cuts moistening with sterile water as well as their incubation at 40°C during 12 h. Then one prepares water extracts of bacterial alpha amylase from bread cuts. Then one determines their fluidifying capacity (FC) by the rate of starch fluidification by alpha amylase using a device of PChP-3 type. The fluidifying capacity value is calculated from the following formula: F C = F N c F N c o n t F N c 60 c 100 % , where: FC - fluidifying capacity, %; FNc - falling number of starch with extract from bread cuts moistened with sterile water, sec; FNcont - falling number of starch with extract from bread cuts inoculated with grain wash.

EFFECT: method allows quick and accurate determination of grains contamination with bread "potato" disease causal agents.
