FIELD: food industry, dairy industry. SUBSTANCE: the present innovation deals with obtaining some new food products of improved properties. The suggested food product contains food foundation and, at least, one immobilized biocatalyzer as a "carrier - biologically active component" complex characterized by the fact that immobilized biocatalyzer is developed before its introduction into food foundation by the first variant, and, according to the second variant, it is developed in product's composition during the process of its obtaining, and food foundation, at least, partially underwent through technological treatment together with immobilized biocatalyzer. Moreover, product contains immobilized biocatalyzer in efficient quantity to reveal its physiologically active properties. Ferment, by the first variant, includes, at least, one carrier and/or, at least, one carrier's precursor and, at least, one biologically active component for fermenting. During this process, at least, one biologically active component is immobilized with, at least, one carrier by developing fermented product containing immobilized biocatalyzer. According to the second variant, ferment contains, at least, one carrier and, at least, one carrier-immobilized biologically active component for fermenting. After fermenting, the product obtained, by all the variants, contains immobilized biocatalyzer at the quantity to meet the following ratio of 107≤MIBC≤100, where MIBC - weight portion of immobilized biocatalyzer in the product, weight%. The innovation enables to obtain product of improved prophylactic, dietary properties, gerodietary properties, in particular, and indicated for juvenile and enteral nutrition and, also, improve palatability, organoleptic and structural characteristics of the product.
