FIELD: food industry. SUBSTANCE: invention envisages utilization of vicinal dithioglycol as food additive capable of sequestering carbonyl compounds contained in foods and human body and also forming complexes with bivalent metal ions. Additives exhibit immunocorrecting activity in human body and also stimulate a series of essential physiological processes, including glycolysis, metabolism of lipids, metal ion transport, and a series of enzymatic processes; ensure scavenging of a series of free radicals; and also inhibit a series of undesired processes in body and foods, including peroxide oxidation of fatty acids. Positive effect of vicinal dithioglycols, additionally to known properties, is caused by their capability of binding carbonyl compounds contained in foods and human body and ketone materials in human body, and also caused by capability of forming complexes with bivalent metal ions, which complexes exert physiologically beneficial effect on transport of these ions through cell membrane, glycolysis process, enzymatic analysis process, catabolism of amino acid carbon framework, and also effect on thiol-disulfide equilibrium in amino acid metabolism. All this enables utilization of vicinal dithioglycols in production of foods to increase their storage time, to create novel therapeutic-prophylactic foods and novel dietetic foods.
